The light Mediterranean cuisine of La Sponda is based on fresh local ingredients and inspired by the great culinary traditions of Naples and the Amalfi Coast. A favorite of many, the Italian cuisine is internationally recognized for the richness of its flavors and the freshness and variety of its ingredients.
Just 29 years old at the time of his appointment as La Sponda’s executive chef in the spring of 2016, Gennaro comes from the town of Somma Vesuviana, east of Naples. Over the 2014 and 2015 seasons he worked as La Sponda’s sous chef de cuisine under former executive chef Matteo Temperini. His menus will continue to reflect the light, Mediterranean approach pioneered at La Sponda by Temperini, who is acknowledged by the young executive chef as “my number one teacher”. Gennaro's golden rule is, he says, “respect for the territory, for local ingredients and local traditions”.
Every moment of the culinary experience that we lived here was one of pure pleasure. From the fresh Spaghetti with sea urchin to the juicy meat cuts, every dish was a symphony of aromas, textures, and tastes that submerged us in a world of pleasure and gastronomic tradition with every bite.
