Pitiona, Cocina de Autor

Rustic elegance and authentic flavors distinguish Pitiona, Cocina de Autor as one of the most iconic restaurants in Oaxaca whose guide, chef José Manuel Baños, seeks to convey through his dishes the love and devotion he feels for his land.

It was here, in this magical setting, that I got carried away by the fascinating atmosphere and the excellent food under the starry sky of Oaxaca. An unparalleled gastronomic experience that transported me to the roots of local cuisine, Pitiona is an artistic expression of culinary art.

The most used ingredients in Pitiona honor and celebrate Oaxacan land and coastal cultures, so 95% are Oaxacan and 5% from the rest of the country, recognizing the variety of flavors, traditions, and products that Mexico offers. Therefore, corn, a variety of chili peppers and, tomato dominate the flavors of beef, duck, pork, as well as fish and seafood; all accompanied by side dishes that vary according to the season.

The chef suggested to me the tasting menu, a sample with different preparations for the diner to try the different creations offered by the restaurant. Also, we can enjoy an exquisite experience of pairing select meats with the best wines, mezcal, and beers.

The kitchen of Pitiona has traveled the world, and its unquestionable quality has earned it a place in the famous list of the 50 Best Restaurants of S. Pellegrino in 2014.

There is no doubt that Pitiona is a place that creates unparalleled gastronomic experiences, coupled with excellence in service. The ideal place to enjoy magnificent dishes in the company of a good mezcal, wine or beer, and having as a stage the majestic view of the historic center of Oaxaca, crowned by the famous church of Santo Domingo de Guzmán.
